i came across the Meatless Mondays a couple weeks ago and thought it was a great initiative and a program that is not out of reach for most people. the mondays campaigns encourage people to cut out meat from their diet once a week – by doing this we can improve our health, reduce our carbon footprint and make another step in the direction to reduce climate change.
i personally am not a vegetarian, but i hardly ever eat meat (probably because i live with two vegetarians!). i think that this program is great because it is not an extreme plan to change the way people think — they are simply asking you to cut meat out one day a week, something that should be easy for everyone!
the site includes a full menu for healthy vegetarian recipe ideas – with categories breakfast, lunch, dinner, dessert, and snacks. i will definitely be frequenting this archive for new recipes now!
