oh she glows: black bean and avocado

Oh She Glows is a website dedicated to healthy living and in turn, healthy eating.  one of the main goals of the site is to get women to feel better about themselves from the inside out – starting with treating your body with respect and care.  the site includes some amaaaazing vegan recipes that i’m going to try out once i have a little more time.

what makes this blog extra cool is that it’s not just about sharing vegan recipes – the author, Angela, writes about her experiences and personal stories that make for quick and interesting reads.  i respect her openness about her eating disorder and don’t doubt that this openness probably helped her overcome her struggles.  as i have seen with some of my friends, eating disorders can be very isolating and cause people to shut themselves out from everyone else.  Angela’s ability to share and discuss her story so openly shows that other people’s feelings about her is a non-issue- and  she does not need to prove herself to anyone.  obviously i am not inside her head, so this is just an outside perspective but i do think that her willingness to put herself out there really does show her strength.

i wanted to share one of her recipes that has a Mexican twist.  in this recipe, she combines two of my favorite foods – black beans and avocado! AND what makes this recipe even better is it’s easy and fast.

INGREDIENTS:

  • Two 15-ounce can black beans
  • 1 lime, juiced
  • 1/2 cup fresh cilantro leaves, chopped
  • 2 small shallots, diced
  • 1/2 tbsp olive oil
  • 3/4 teaspoon ground cumin
  • 1/4-1/2 tsp Kosher Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 large avocado, chopped into 1/2 inch pieces

 Directions: Drain the beans thoroughly and rinse. In a large bowl add the beans and toss with lime juice, cilantro leaves, diced shallot, and ground cumin. Season to taste with salt and black pepper. Peel and slice an avocado, and serve the beans at room temperature, with chopped avocado on top or mixed throughout the salad. Note that I did not have any cilantro on hand, but it still tasted delicious! Makes 3-4 servings.

this site is not only a great source for delicious, healthy and vegan recipes but it is also inspiring.  i highly recommend Oh She Glows!
